Beef Stew for a Cold Day

This is my favorite stew recipe for a winter day…or any day really. My husband and kids LOVE it. Even better, it’s packed with nutrient dense ingredients, and my boys have no clue. Last perk? Make this in your Instant Pot and you are done in under an hour!

The benefits of bone broth are a mile long. For this recipe I prefer to use chicken broth, even though this is beef stew I find the chicken enhances the flavor. When I am feeling adventurous I make my own bone broth, but as a busy mom I often purchase a high quality one from my co-op or health food store.

-Rich in calcium/phosphorus/magnesium/trace minerals

-High in gelatin protein

-Easy to digest & absorb

-Anti-inflammatory

AND it can even improve your mood! Now you can see why I like to make this recipe once a week during the colder months to get as much broth into my family as possible.


Bone Broth Beef Vegetable Stew

1/2 cup chopped baby carrots

2 cups diced red potatoes

2 cups chopped yellow onions

3 garlic cloves, finely diced or crushed

2 Tbsp avocado oil 

1 large zucchini, quartered & diced

14oz can diced tomatoes 

24oz bone broth, thawed if frozen

2 cups chopped green beans, frozen

2 cups frozen organic kale or 4 cups fresh

2 lbs stew meat ( dice if not already done for you)

2 tsp salt

1 tsp basil

1 tsp chili powder

2 Tbsp coconut aminos

2 tsp all purpose seasoning 

2 cups water


Set your Instant Pot to sauté mode, and cook the garlic and onion in avocado oil until opaque. Then simply add all the other ingredients, seal the steam vent, and cook on manual high for 20 min. Enjoy on its own, or with some homemade cornbread! You can also cook this stove top by bringing all ingredients to a boil, then turning down to low for 60 min or until the carrots are cooked.
